Friday Frittata


  
                                              I had some leftover cooked potatoes
                                              from yesterday and added carrots,
                                              leeks, courgette (zucchini), garlic and
                                              a little bit of onion. I ended up using
                                              4 eggs and some cheese, herbs and
                                              seasoning and baked it in the oven.
                                              Until set bubbling and golden.
                                              In my oven it took about 45mins
                                              at 180° Celsius.

      It can be adapted to whatever you have
      available to use.

      Cooked rice can be added instead of potatoes.
